Will the new metadata show in every PDF reader?

Yes. Title, author, subject, keywords, creator, and producer are part of the PDF specification's document information dictionary, so every compliant reader displays them in the document properties.

Can I clear a metadata field instead of changing it?

Yes. Empty the field before saving and it will be written blank, removing the previous value from the file.
